Kids Recipe #5 from Go4Fun

Corn & Zucchini fritters make great lunchbox fillers for your kids, and are a yummy way to incorporate more vegetables into their diet. Serve with dipping sauce for a morning or afternoon snack, use as sandwich fillers or serve with a side-salad for lunch.

Preparation time: 20 minutes

Serves: 2 – 3

Ingredients:

2 zucchinis, grated with excess moisture ‘squeezed’ out

1 corncob, kernels removed

2 eggs, beaten

1/2-cup plain flour

Salt & pepper to taste

Small amount of olive oil for frying

Method:

Combine all ingredients and use a tablespoon to shape into patties. Pan-fry each side in lightly oiled pan for 3-4 minutes on low heat or until golden. Place on paper towel to drain any excess oil.

Kids Recipe #4 from Go4Fun

veg snack box

 

This snack idea brought to you by Go4Fun Coffs Harbour

Processed snack foods can often be expensive and full of additives. Try this veggie snack box for a quick, cheap and easy way to get your kids eating more vegetables!

Serves 2

Preparation time – 5 minutes

Ingredients

1 ripe medium avocado

Salt & pepper to taste

Any chopped vegetables that your children enjoy – cucumber, tomato, carrot, celery, capsicum, snow peas, mushrooms etc.

Method

  • Mash avocado with a fork until smooth. Add salt and pepper to taste.
  • Place a tablespoon of the mashed avocado into a snack-sized container.
  • Add your child’s favourite chopped vegetables.
  • Tip – try finding a snack box that fits conveniently into their lunchbox.

Kids Recipe #3 from Go4Fun

Healthy snacks between meals are a great way for your children to keep up their energy levels. Adding fruit and vegetables means that your children will be more likely to meet their daily fruit and vegetable requirements – getting all the important vitamins, minerals and fiber they need to support healthy development. Try this fun twist on noughts and crosses for an after school snack!

What you will need:

3 slices wholemeal bread

Sliced cheese, tomato, cucumber and boiled egg

Carrot and capsicum stick

Method:

  • Toast the bread and cut into quarters to make 9 squares
  • For the noughts, top 4 squares with sliced tomato and boiled egg
  • For the crosses, top 5 squares with sliced cheese, cucumber and carrot or capsicum sticks

Kids Recipe #2 from Go4Fun

bearBlast off with breakfast!

Why is eating breakfast everyday important for your child?

  • Because it gives them energy to get them through the day at school or at play!
  • Having food in their tummy will make it easier for them to concentrate and learn.
  • Having a healthy breakfast means they will be fuller for longer and less likely to find themselves snacking on unhealthy foods!
  • A healthy breakfast can contain important vitamins and minerals for growth and development.

Here is a healthy breakfast idea for inspiration:

Peanut Banana Bears

Serves 2

What you need:

2 pieces wholemeal or wholegrain toast

2 tbsp peanut butter

1 small banana, sliced

Small handful blueberries, currants or raisins

  • Spread a thin layer of peanut butter on toast in a circle
  • Use sliced banana for bear ears and nose
  • Arrange berries or currants as eyes and tip of nose
