Allie’s Banana-Oatmeal Bread

This is one of those recipes that has been in my old recipe book for years. I don’t know where it originally came from and I’ve adapted it a little so I’m now calling it my own 😉

Obviously you can make your own substitutions but in general this is a really easy and healthy banana bread to whip up!

INGREDIENTS:

  • 1 1/2 cups flour (I use Spelt)
  • 1/2 cup sugar (or alternative)
  • 1 1/2tsp baking powder
  • 1/4tsp baking soda
  • 1/4tsp salt
  • 3/4 cup oats
  • 1cup mashed bananas (approx. 3)
  • 1/3 cup buttermilk or yogurt
  • 1/4 cup coconut oil (or vegetable oil)
  • 1tsp vanilla
  • 2 eggs, beaten

METHOD:

1. Preheat oven to 180 degree and grease loaf pan.

2. Combine wet ingredients.

3. Combine dry ingredients.

4. Pour wet ingredients into dry ingredients and combine until just moist.

5. Spoon batter in pan and bake 55 minutes or until golden brown on top and skewer comes out clean

6. Cool on rack in pan for 15 minutes before removing to cool completely.
