Kids cooking – Mini Muffins
ByI’ve been baking this basic muffin recipe for years. Use the basic recipe and then you simply add fruit, it can be bananas, stewed or tiny diced piece of apple or pear, any sort of berry, soft pears or nectarines – or anything else you can think of.
The recipe is quick and any aged child can help – my 3 year old loves helping me make these… mixing and of course licking the bowl afterwards!
180g plain flour
1t baking powder
1t bi-carb
80g sugar (or less)
2 eggs
120ml milk
3T melted butter
150g fruit of your choice
> Preheat oven to 200 degrees. Grease muffin tins.
> Mix wet, then add to dry ingredients.
> Bake 200 degrees for 12 minutes.
(Makes 24 mini muffins or 12 regular muffins)
