Recipe: Milo Cupcakes

I came across a recipe on the weekend for Milo & Coconut Cookies. The author didn’t have any cocoa powder on hand when baking so decided milo would be a good substitute. What a brilliant idea! My kids loved them.

So today I baked Milo Cupcakes and they have instantly become a 5 star keeper. The kids gobbled them down (and so did I, admittedly) and they are EASY to make. An awesome snack for afternoon tea, happy boys today!

Here is the recipe originally from Essential Kids but I have adapted it slightly, mainly to cut down on the sugar:

Ingredients:

1 1/2 cups SR flour

2/3 cup milo

2/3 cup milk

1 egg

1/2 cup raw sugar (or less, or try coconut sugar)

1/2 tsp baking power

60g butter, melted

Method:

Preheat oven to 190 degrees c.

Line 12 cup muffin tin with cupcake papers.

Add all ingredients to a bowl and mix or beat ingredients until smooth.

Spoon into tin to 3/4 full.

Bake 20 minutes (mine took slightly less, depends on your oven)

 

You could ice them if you wish but I didn’t bother, the kids loved them as they were and less work for me!
