Recipe: Overnight Spelt Pancakes

Overnight Spelt Pancakes
I’ve shared this recipe in time for Father’s Day. Soaking your flours overnight breaks the phytic acid down in the bran component of the grain making it easier to digest reducing bloating and other nasty signs of indigestion. It also increases the vitamin content and provides Lactobacilli. All over the world, grains have traditionally been prepared by soaking them in a similiar method to this meaning this is no new trend.
Ingredients:
2 cups of wholemeal spelt
2 cups of natural yoghurt
2 tablespoons coconut sugar
1/2 teaspoon of baking soda
1/2 teaspoon vanilla extract
2 organic eggs
2 tablespoons of melted butter
1 small banana
Additional water
Method:
Combine spelt flour with yogurt in a bowl and leave in a warm place overnight covered with cling wrap to stop insects!
In the morning place in a mixmaster with the rest of the ingredients and mix on low until combined well. I added approximately 1/2cup of water to get the desired consistency. You want the batter runny enough to enable it to be easily poured onto the frypan. At this point you could stir through some blueberries but I used banana as I had some very ripe bananas that needed to be used.
Your pancakes are ready to cook now. Keep in mind they take a little longer to prepare than traditional pancakes but your tummy will thank you for your patience later.
Serve with real maple syrup (not imitation), fresh berries, sliced banana, seasonal fruit, toasted almonds, fresh cream or yoghurt. Let the kids decorate the pancakes for Dad.
