Sunday baking

It seems lately I have been making a regular event baking on Sunday afternoons for lunches and snacks for the week ahead. I don’t want to exactly say I do this “every Sunday” just yet as the impulse could leave anyday now!

But yesterday I made two things, both really easy to do and the kids think I am Super Mum for making it!

Chocolate, bran and Zucchini Muffins

These are from the Veggie Smugglers website and I know it is strange to think they include 1 grated zucchini, but when you think about it – zucchini has no taste and it adds moisture to the muffins. These turned out really yummy. Next time I will add a few chocolate chips for something extra yummy. Even Mummy loves these! You can see the full recipe here.

Cheese and Vegemite Scrolls

Now these deserve 5 stars! With only 4 ingredients these are cheap and EASY to make and VERY impressive. My kids cannot get enough of these. My batch made 10 so I froze some for other school days lunch in the future. Very soft and yummy and dare I say it? Heaps better than the ones bought from the bakery.
