Week #1 – Mother Nature’s Challenge

I am super excited to be partnering with Mother Nature’s for a weekly challenge.

Basically each week I am given a hamper of the weekly specials and my challenge is to cook at least ONE meal using one of the specials.

This week’s specials:

 

The fruit has been quickly devoured by my kids and I have to say the gala apples are SO crunchy and juicy. And the perfect little size for kid’s lunchboxes.

So I chose the sweet potato and garlic. In searching for a recipe I came across this website which has some great ideas on ways to use sweet potato, including easy recipes for homemade baby food – www.australiansweetpotatoes.com.au

And this is what I cooked, to be used for the kid’s lunches. It can be frozen so after it cooled I sliced it up and popped in the freezer!

However, I was feeling particularly enthusiastic and had four peaches sitting on my bench so I made this recipe and the kids LOVED it! Definitely a keeper!

EASY PEACH COBBLER

Ingredients: 

1/2 cup unsalted butter

1 cup plain flour

2 cups sugar, divided (I halved the amount of sugar and it was still rather sweet)

1 T baking powder

Pinch of salt

1 cup milk

4 cups fresh peach slices

1T lemon juice

Method:

1.Melt butter in a 13- x 9-inch baking dish.

2. Combine flour, 1 cup sugar, baking powder, and salt; add milk, stirring just until dry ingredients are moistened. Pour batter over butter (do not stir).

3. Bring remaining 1 cup sugar, peach slices, and lemon juice to a boil over high heat, stirring constantly; pour over batter (do not stir). Sprinkle with cinnamon, if desired.

4. Bake at 375° for 40 to 45 minutes or until golden brown. Serve cobbler warm or cool with vanilla ice-cream.
