Week #2 – Mother Nature’s Challenge

Basically each week I am given a hamper of the weekly specials and my challenge is to cook at least ONE meal using one of the specials.
This week’s specials:
We are loving the new season apples, they are so crunchy and perfect for lunch boxes! The kids quickly took to the oranges and love when I freeze segments, perfect for hot summer afternoons!
Since I had an abundance of apples I decided to make some apple muffins. My kids love apples, but I found a recipe that disguses the apple, for those fussy eaters!

INVISIBLE APPLE MUFFINS
- 2 cups self raising flour ( I used 1 cup white / 1 cup wholemeal)
- 1/2 cup caster sugar (I used 1/4 cup)
- 1/3 cup (80mL) olive or vegetable oil (I used melted butter)
- 1/3 cup milk
- 2 eggs
- 1/2 teaspoon vanilla extract
- 2 medium apples, peeled and grated
- 1 teaspoon cinnamon
- 1 teaspoon caster sugar, extra
Method:
Preheat oven to 180°C and place paper cases in muffin tray. Sift flour into large bowl, add caster sugar and mix well. In a glass jug, measure out oil (to 1/3 cup), add milk (to 1/3 cup), eggs and vanilla, whisk to combine. Pour liquid into dry ingredients, add grated apple and stir or beat well to combine. Sprinkle with combined cinnamon and extra caster sugar. Bake for 20-25 minutes until a skewer inserted into the muffin comes out clean.
